  • MONTEREY JACK CHEESE – You can really use any cheese here. Mozzarella, cheddar, or even a spicy Pepper Jack would be good.
  • EGGS
  • PARMESAN
  • BUTTER
  • GARLIC 
  • SALT

Spinach Soufflé is a fluffy vegetable side dish with eggs, cream cheese, Parmesan cheese, and Monterey Jack cheese. Low-carb and delicious!
  • 1 (12 ounce) package frozen spinach, thawed and squeezed dry with paper towels
  • 4 ounces cream cheese, softened
  • cups shredded Monterey Jack cheese
  • 6 large eggs, , beaten
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter,, melted
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • Preheat oven and grease a 9″ baking dish, square or round.

  • In a large bowl, add all of the ingredients and stir together well.

  • Bake for 35-45 minutes or until the center is set.
