Keto Blueberry Pecan Chicken Salad – a little sweet and a little savory, this chicken salad is a low-carb recipe filled with chicken, blueberries, pecans, celery, bacon, and green onions.
KETO BLUEBERRY PECAN CHICKEN SALAD
I know I already have a perfectly good Keto Chicken Salad on this site. But I didn’t have one that has sweet tones like some of my favorite chicken salads. This has candied pecans and blueberries for a bite of freshness.
INGREDIENTS:
- Chicken – rotisserie chicken works well here.
- Pecans – these are candied with Monkfruit and give a sweet crunch.
- Blueberries – one of the lower carb fruits out there and give a nice pop of fruity flavor.
- Celery – for some crunch!
- Green onions – give is a savory flavor.
- Bacon – gives it a salty bite.
CANDIED PECANS
I tried making the candied pecans with both Monkfruit and Allulose. The Allulose yielded a sweet pecan but the texture was sticky. The Monkfruit has a slightly cooling effect on the pecans. I countered this with a little butter. That was the winning combination.

Keto Blueberry Pecan Chicken Salad
Ingredients

rotiserrie chicken, chopped -

mayonnaise -

celery, diced -

powdered erythritol -

bacon, cooked and crumbled
Instructions

In a medium skillet, melt butter and add the Monkfruit. Stir until melted. Remove from heat and quickly stir in the pecans. Pour onto parchment paper to cool. You can speed this up by placing in the refrigerator. Break into pieces.

For the salad, add the chicken, pecans, mayonnaise, celery, blueberries, green onions, and powdered erythritol. Stir well to coat. Stir in the bacon right before serving to keep the bacon crispy.
