This Italian Sub Pasta Salad has everything in an Italian sub in a salad with pasta. This is a super hearty salad that can be a main meal.

ITALIAN SUB PASTA SALAD RECIPE

This salad has all the flavors of a sub sandwich but we add a little pasta for heartiness. It has salami, pepperoni, and deli ham with the fixings of Provolone, tomatoes, lettuce, and pepperoncini.

It reminds me of this Antipasto Salad but with pasta.

You can prep most of it ahead of time and then add the lettuce and tomatoes right before serving!

INGREDIENTS

  • PASTA – You can use any short pasta here but I really like curly pasta because it soaks in the sauce.
  • PEPPERONI
  • SALAMI
  • DELI HAM
  • TOMATOES
  • PROVOLONE – The sharpness of this cheese is great and classic in an Italian sub.
  • PEPPERONCINI – This gives the salad some spice.
  • BELL PEPPER – This adds some crunch to the salad.
  • RED ONION
  • LETTUCE

DRESSING:

  • 1/4
    cup
    olive oil
  • 1/4
    cup
    balsamic vinegar
  • 2
    garlic cloves, minced
  • 1
    teaspoon
    Dijon mustard
  • 1/4
    teaspoon
    kosher salt and pepper to taste

SALAD:

  • 2
    cups
    uncooked spiral pasta
  • 1
    cup
    diced bell pepper
    (any color)
  • 3/4
    cup
    sliced pepperoncini
  • 1/2
    red onion, sliced
  • 4
    ounces
    cubed Provolone cheese
  • 2
    ounces
    thinly sliced deli ham
  • 2
    ounces
    thinly sliced hard salami
  • 5
    cups
    lettuce, chopped
  • 3/4
    cup
    cherry tomatoes, quartered

  1. In a small bowl, whisk together the dressing ingredients.

  2. Cook pasta in salted water according to package directions. Drain and cool.

  3. In a large bowl, combine bell pepper, pepperoncini, red onion, cheese, meats, and pasta. Right before serving add lettuce and tomatoes. Drizzle with dressing and toss to coat. Add more salt and pepper if needed and serve.
