Here’s What You’ll Need:

  • 2 Zucchini cut into ¼ inch thick slices
  • 1 lbs Low-Sodium Ground Beef
  • 2 cups Spaghetti Sauce
  • 1 cup Ricotta Cheese
  • 2 cups Shredded Mozzarella Cheese
  • ¼ cup Chopped Fresh Basil
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Italian Seasoning
  • Salt and Pepper to taste

Instructions
 

Instructions:

  • Preheat oven to 350ºF. Grease a 9″ x 13″ baking dish.
  • In a large skillet, brown ground beef over medium-high heat. Drain fat and stir in spaghetti sauce and garlic powder.
  • Lay zucchini slices in the prepared baking dish. Layer with half of the meat sauce and top with half of the ricotta cheese.
  • Sprinkle one cup of the mozzarella cheese over the top. Repeat layers, using remaining zucchini, meat, ricotta, and mozzarella cheese.
  • Sprinkle the basil, Italian seasoning, and salt and pepper over the top. Cover with foil and bake for 45 minutes.
  • Remove foil and bake an additional 10 minutes. Allow to cool and serve.
