What is Keto Lasagna?
Keto lasagna is a low-carb version of the classic Italian comfort food. Instead of using traditional lasagna noodles made from wheat flour, keto lasagna uses alternatives such as zucchini slices, eggplant slices, or even thinly sliced deli meat as the ”noodles.” This allows for a lower carb count while still getting the same indulgent, cheesy layers of goodness.
Ingredients for Keto Lasagna:
- 1 lb ground beef
- 1 can tomato sauce
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 zucchini, thinly sliced
- 1 eggplant, thinly sliced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Instructions:
- Preheat your oven to 375°F.
- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the tomato sauce, garlic powder, and Italian seasoning to the skillet and stir to combine.
- In a separate bowl, mix the ricotta, mozzarella, and Parmesan cheeses together.
- In a baking dish, layer the zucchini and eggplant slices to cover the bottom of the dish.
- Add a layer of the meat sauce on top of the vegetable slices.
- Add a layer of the cheese mixture on top of the meat sauce.
- Repeat the layers until you run out of ingredients, finishing with a layer of the cheese mixture on top.
- Drizzle olive oil over the top layer of cheese.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let the lasagna rest for a few minutes before slicing and serving.
