CUCUMBER DILL BITES
This snack came about after we had been eating lots of sugary snacks, chips, and basically all of the unhealthy food.
I wanted something light, cool, and refreshing.
INGREDIENTS
- CUCUMBERS – I like to use Hothouse or English cucumbers because the seeds are edible and not as noticeable as others.
- CREAM CHEESE – The richness of the cream cheese balances the light cucumber.
- SOUR CREAM – This thins out the cream cheese a bit. You could use Greek yogurt as well.
- GARLIC POWDER – This adds a little flavor and a savory flair.
- FRESH DILL – Dill was meant to be with cucumber. It goes so well.
- SALT – If you ever think you’re missing something you usually haven’t seasoned with salt well.
- OPTIONAL – A sprinkle of diced tomatoes and crumbled feta.
Tomatoes and feta are polarizing but I love them on top of this snack.

Hothouse or English cucumber -
4
ounces
cream cheese, softened to room temperature -
2
tablespoons
sour cream
(Greek yogurt can be substituted) -
1
tablespoon
fresh dill, finely chopped -
1/4
teaspoon
garlic powder -
1/4
teaspoon
kosher salt, plus more to taste
(Optional Toppings: diced tomato and crumbled feta)

Peel cucumber leaving some skin on for color. Slice into 1/4 inch slices.

In a small bowl, combine the rest of the ingredients, adding more salt and pepper to taste.

Spoon into a small ziploc bag. Snip the corner off with scissors. Pipe a very small amount on top of each slice. Sprinkle with tomatoes and feta if using.

Chill until serving.
