BUFFALO CHICKEN TORTELLINI SALAD
Anything Buffalo chicken is immediately a Denney family favorite. We eat, breathe, and live football so it is ingrained in our lifestyle. Combine that with Buitoni Three Cheese Tortellini…heaven. My family could not stop eating this salad!
INGREDIENTS
- Three Cheese Tortellini – tender cheese tortellini is the base of this salad.
- Rotisserie Chicken – you can also use leftover grilled chicken or even breaded chicken fingers.
- Celery – gives this salad a crunch.
- Tomato – brings a level of bright fresh flavor.
- Green Onions – have a mild onion flavor. If you want more of a bite you could use a red onion.
- Ranch Dressing – a cool tangy flavor element.
- Buffalo Wing Sauce – adds some spice. Feel free to adjust to your level of kick.
- Blue Cheese Crumbles – for the purists, blue cheese is a must but not everyone loves blue cheese so its optional in this dish.
HOW TO MAKE BUFFALO CHICKEN TORTELLINI SALAD
- Prepare the Buitoni Three Cheese Tortellini according to the package directions. Drain pasta and let it cool. Buitoni products cook in just a few minutes making this dish even easier!
- In a large bowl, add the cooled tortellini, chicken, celery, and tomatoes. Add the blue cheese crumbles if desired.
- FOR THE DRESSING: In a small bowl, stir together the ranch dressing and the Buffalo wing sauce. Pour over the salad ingredients and toss gently.
- Chill salad in the refrigerator for at least 30 minutes before serving.

TIPS FOR THIS RECIPE
- This salad in my opinion is best eaten fresh, the day it’s made. As it sits it absorbs the dressing. If you want to make it ahead of time, reserve half of the dressing to toss in right before.
- Refrigerated tortellini is key. I love Buitoni Three Cheese Tortellini because it’s perfectly tender pasta filled with a delicious three-cheese blend that pairs perfectly with the dressing.
- If you don’t like blue cheese crumbles, you can leave them off.
- This salad has an average spice. If you like extra kick add more.
- To make it pretty I always save some of the add-ins to add on top. Save some of the dressing to drizzle on top as well.
